Senior Sous Chef

Our Center City hotel is located "steps away from history," seated along Philadelphia's Avenue of the Arts, between the Wilma Theatre and the Academy of Music. 
A Senior Sous Chef is responsible for overseeing kitchen operations and select, train, appraise, discipline and coordinate kitchen staff in order to prepare, cook and present food according to the hotel standards.
What will I be doing?
  • Interview, select, train, appraise, schedule, discipline and supervise kitchen staff 
  • Effectively communicate with the Catering, Sales and Banquets teams to ensure groups and other customers food expectations are met
  • Supervise preparation, cooking and presentation of meals served in the team member restaurant
  • Assist in the development and enforcement of policies to control food cost and quality
  • Complete food requisitions as well as inventories
  • Ensure proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations
  • Lead menu planning activities
